These low carb bars have all the flavor and texture of your favorite cranberry  linzer cookies, but without the tedious work! Keto, gluten free, egg free, sugar fee and Atkins friendly. Cranberry  Streusel Keto Bars – You must try this recipe.

Cranberry Streusel Keto Bars

Ingredients

Shortbread Crust

  • 1/2 cup sunflower seeds
  • 1/2 cup coconut flour
  • 1 cup sesame flour
  • 12 tbsp butter
  • 1 tsp vanilla extract
  • 1 tsp vanilla stevia
  • 1/2 cup Swerve confectioners sweetener
  • 1/4 tsp salt

Cranberry Sauce

  • DIRECTIONS

Streusel Topping

  • 1 cup reserved shortbread batter
  • 1 tsp cinnamon
  • 2 tbsp Sukrin brown sugar substitute or use Swerve

Optional Icing Drizzle: 1/4 cup Swerve confectioners sweetener with 1 tbsp milk

Instructions

  1. Preheat the oven to 350 degrees F.
  2. Place all the shortbread ingredients into a food processor and blend until combined. Reserve 1 cup of batter for topping.
  3. Spread remaining batter into a parchment lined 8 by 8 baking dish.
  4. Bake 10 minutes then allow to cool.
  5. Prepare Cranberry Sauce by placing all ingredients into a small sauce pan over medium high heat and bring to a boil.
  6. Simmer 10 minutes until thickened.
  7. Pour evenly over crust.
  8. Place reserved shortbread batter in a bowl with topping ingredients and mix until combined.
  9. Sprinkle over the filling and bake for 20 minutes until golden brown.
  10. Cool 30 minutes then refrigerate for 2-3 hours or overnight.
  11. To make optional drizzle topping to serve, simply mix the sweetener and the milk together until smooth an drizzle over slices to serve.
