
Everyone has their own idea of what makes the best Mississippi Mud Pie, but we can all agree on a few things: chocolate, chocolate and more chocolate. For me, the idea of a pie that is insanely decadent and delicious as well as being quick and easy is a must.
After many years of trying to make it better and easier, this is the pie that won. It’s also the pie that I get the most recipe requests for at family gatherings. Although you are free to keep this one all to yourself.
Ingredients
- 1 sleeve (9 full sized) chocolate graham crackers
- 3 tablespoons brown sugar, packed
- 4 tablespoons melted butter
- 18 wt oz 60% dark chocolate, divided
- 1/3 cup brewed coffee
- 5 cups plus 3 tablespoons heavy cream, divided
- 3/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Salt
- 1/4 cup chocolate sauce
Directions
Step 1: Crumble the Graham Crackers
Add the graham crackers and brown sugar to a food processor. Process until just crumbs remain.
Step 2: Add the Butter
While the mixer is running, slowly add the melted butter until well combined with the crumbs.
Step 3: Press Into a Pie Plate, and Bake
Add the crust to a 9.5 inch pie plate, press firmly into the sides and bottom. Bake at 350 degrees Fahrenheit for 10 to 12 minutes or until the crust is dry and firm.
Step 4: Make the Fudge Layer
Add 8 ounces dark chocolate, 1/3 cup coffee and 3 tablespoons heavy cream to the top of a double boiler set over gently simmering water. Stir until the chocolate is melted and smooth.
Tip: Don’t like coffee? No problem! Just replace the coffee with cream and you’re all set.
Step 5: And to Crust and Chill
Pour into the crust and chill until set.
Step 6: Make the Mousse Layer
Melt the remaining 10 ounces chocolate, allow to cool slightly. Add 3 cups heavy cream, 1/4 cup powdered sugar and a pinch of salt to a stand mixer, beat on high until soft peaks form. Slowly add the chocolate, mixing until well combined with the cream.
Tip: Want to make this a “Grown-Ups Only” pie? Just add a shot of bourbon to the cream along with the melted chocolate.
Step 7: Add the Mousse
Add the chocolate mousse to the pie and spread evenly.
Step 8: Make the Whipped Cream
Add the remaining 2 cups heavy cream, 1/2 cup powdered sugar, 1 teaspoon vanilla and a pinch of salt to the stand mixer. Mix on high until soft to medium peaks form.
Step 9: Top the Pie with Whipped Cream
Add the whipped cream and spread evenly.
Step 10: Drizzle with Chocolate Sauce
Chill until ready to serve.
